very very happy with bread knife. have used it on various breads and it came up terrific. the one i bought from you is my second purchase which i gave to a dear friend. the first one i bought was from a shop which was of course much more costly. i have since bought another shun knife (chef). have not used it as yet. will buy another (chinese chopper) soon as a present for another friend. i have become a big fan of shun.

Never thought I'd spend 90 bucks for a bread knife but it was worth it. I've got more than one Shun knife in my knife block so its not so odd to have this one for the price. Nice heft though I think the wooden handled model would be better balanced. Nonetheless, like all the other Shun knives with the VG-10 blade, it cuts effortlessly and looks beautiful, too. Only time will tell if it was worth the investment.

As for most casual cooks, I take pleasure in preparing food for a few friends. So I usually have a few glasses of scotch when I cook, no big deal. So to prevent any accidents, its important for a knife to have excellent balance and feel, and not be too sharp. I'm not a circus performer or a knife juggler, so I don't have the kind of dexterity needed to handle an extremely sharp knife after I've had a few.
Of the five times I have used this knife, I cut myself four of those times. If I shell out the money for a supposedly high-quality knife, I expect it to be effective, but forgiving.
Another gripe of mine is that I have found the knife to be completely ineffective for certain uses, such as cleaning and skinning wild game. Again, if I'm going to pay premium prices, I expect the product to be versatile.
